He utilizes local purveyors and ingredients to provide custom menus for his clients. Robert has over 20 years of epicurean experience in the food and beverage industry and provides top-notch private chef in-home full-service catering or drop-off delivery for 2-30 people, or at his culinary gallery, Bert’s Gourmet Kitchen, in Big Sky, Montana, which is available to rent out for private parties.  All menus are hand-crafted to cater to individual needs and utilize local, organic, and sustainable ingredients, while specializing in foods with flavor & personality. Bert the Butcher can adapt meals to be gluten free, dairy free, or whatever dietary needs a client may have.

Customized to your needs, Bert the Butcher is available by reservation for one special night or to handle your meal planning for the length of your Big Sky stay. Robert works directly with clients to handcraft menus to match your occasion and will adapt for dietary restrictions: gluten-free, dairy free or any special requests as needed.

Bert the Butcher is a classically trained chef who graduated from the Culinary Institute of America in Hyde Park, NY. Robert enjoys cooking many different styles of food including Southern fare, Continental Cuisine and different types of ethnic food (Chinese, Japanese, South East Asian, Jamaican & South American). Blending local and sustainable ingredients with his cultural influences, Robert combines a love of food with his passion for Big Sky.

Meet Bert

Robert Hynson (Bert) was born in Laurel, Mississippi. Enjoying traveling, skiing and worldly cuisine, Robert’s life has led him across the globe. Upon completion of High School, Robert joined the US Marine Corps and served in 29 Palms California, Camp Lejuene, North Carolina and Okinawa, Japan. After 4 years in the Marines, he moved to Brevard, North Carolina and received a Bachelor of Science in Southern American History. He then enrolled at the Culinary Institute of America in Hyde Park, NY where he earned his Associate Degree in Culinary Arts. After falling in love with the Hudson Valley, Robert spent seven years working and honing his skills in the restaurants of the Hudson Valley and New York City.

Over 10 years, ago his passion for skiing led he and his wife, Anna, to Big Sky, MT. They cherish what Big Sky has to offer: a wonderfully supportive community, unspoiled nature and outdoor activities. Together they are raising their young daughter, Madeline, to appreciate art, music, nature and of course great food!

Robert worked as the Butcher at the Yellowstone Club for the last 5 years. He was the Pit Master in charge of the popular Friday night BBQs and catered private in-home dinners. Robert wanted to share his passion for food with all Big Sky and decided to open his own culinary shop in 2018.
